Flourless, wheatless, gluten free and low carb

this morning I wanted pancakes, or something like them.  I've been craving carbs for days, since I ran out of Ezekial bread and haven't been to the store.  My son Pablo, who went carb free and lost 1/3 of his body weight, give or take, had convinced me months ago to give it a shot.  I'm always surprised when people say, "Boy, have you lost weight!" (or girl) because I did without any other effort.
Of course, quitting carbs is an effort, especially for someone like me who based her entire existence on brown rice.  Now, six months in and Pablo living in NYC, I'm eating some carbs again, but so little and so selectively I can say low carb.  One piece of Ezekial bread, one serving of grains. One of these a day, that's all.
So back to the dilemma of falling asleep dreaming of a big fat sandwich and waking up still wanting something bread-ish and having none.  What I do have is almond flour, seeds and nuts of all kinds, and flax seed meal, which I hear is good for me but not quite good enough to overcome how I feel about it.  I also have a small bag of white flour to be used in any Southern Food Emergency, like having to deep fry something.  It's been in there awhile.


I ground up some pumpkin seeds.  Let me right now praise the Cuisinart, my absolute hands down favorite kitchen appliance.  Mine is one of the originals from France.  I got it for $4 in the local thrift store.  I added an equal amount of almond flour.  If I hadn't had that, I could have thrown in whole almonds and ground them.
I've heard pumpkin seeds are digestible when roasted, and I know almonds are better for me soaked and the skins removed.  But I was in a hurry.  I have very little patience for deferred gratification.
I put in a table spoon of flax meal because I heard it was good for me and I have it from Pablo's forays, sometimes successful, into the world of low carb baking.  Then I added an egg, a little vanilla and some water to make a thick paste.  A little more liquid needed, it was pretty thick, so I added a little almond milk (store bought) until it looked like thick pancake batter.
Cast iron skillet hot and smokin', a little sunflower oil, turned it down to med-low and made super light and sort of delicious pancakes.  They needed a little salt to bring up the flavor, and flax has a slippery mouth feel I'll skip next time.  
So that's my morning pancake idea.  If you try it and find something that really works, please let me know!  I had mine with a fried egg, fresh from the farm.  Would've been great with maple syrup, too, but not on my diet right now as I stay away from sugars of all kinds.  Except dark chocolate.  Balance and moderation in all things!

Have you ever wished there was something you could do to calm yourself down, or make yourself feel better?  Have you ever wondered how to help someone who was sick or sad?  These are ways Reiki can help.

Sometimes people confuse Reiki with Rolfing, a deep pressure massage therapy.  Reiki is the opposite.  It is a very gentle and non-invasive technique that came to the USA from Japan in the 1930’s.  It was brought by one Japanese woman who had such success with her patients that word of Reiki spread.  Now people do Reiki in almost every country in the world.

Reiki has nothing to do with faith or religious beliefs.  Its effect is to balance and calm, so our natural healing abilities can function more freely.  Even when dealing with a severe illness or disease, Reiki can be comforting and soothing.

It is used in hospitals around the world, and especially in oncology centers as it is known to help with not just pain and anxiety, but also the side effects of chemotherapy treatments.

Since 2002 I have been a Reiki Master, trained in the old and traditional way.  What this means is I can teach anyone to give Reiki self treatment and to treat  the beings they love.  Most animals love Reiki and some people learn just to help their pets.  I am planning a class soon, and if you would like to know more about it, email me or call to find out how this can work for you.
